Lemon Garlic Baked Salmon Recipe Ingredients:
- 4 salmon fillets
- 3 tbsp olive oil
- 4 cloves of garlic
- Zest of 1 lemon
- Juice of 1 lemon
- 1 tsp dried oregano
- Salt and pepper
- Fresh parsley
- 2 cups broccoli
- 2 cups cherry tomatoes
- 1 bell pepper, sliced
- 1 red onion, sliced
- 2 tbsp olive oil
- 1 tsp dried thyme
Recipe Instructions:
- Preheat your oven to 400°F.
- Mix olive oil, minced garlic, lemon zest, lemon juice, dried oregano, salt, and pepper in a bowl.
- Place the salmon fillets in a baking dish and pour the marinade over. Ensure each fillet is well coated and marinated for 15 to 20 minutes.
- Toss broccoli, cherry tomatoes, bell pepper, red onion with olive oil, salt, pepper, and dried thyme in a separate bowl.
