Grilled Chicken & Veggie Skewers

Enjoy a delicious and healthy meal with our easy grilled chicken and veggie skewers recipe, perfect for a quick weeknight dinner or a summer barbecue!

Ingredients:

  • 2 chicken breasts, cut into cubes
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 zucchini, sliced
  • 1 red onion, cut into chunks
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Wooden skewers, soaked in water for 30 minutes

Instructions:

  • In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
  • Add chicken and veggies to the bowl and marinate for at least 30 minutes.
  • Thread chicken and veggies onto skewers.
  • Preheat grill to medium-high heat.
  • Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked through.
  • Serve with your favorite dipping sauce.
