Grilled Chicken and Avocado Salad

This recipe is perfect for a light lunch or dinner and is packed with protein and healthy fats, making it a great option for a nutritious meal.

Ingredients:

•2 boneless, skinless chicken breasts

•1 ripe avocado, diced

•1 cup cherry tomatoes, halved

•1/2 red onion, thinly sliced

•4 cups mixed greens (spinach, arugula, lettuce)

•1/4 cup feta cheese, crumbled

•2 tablespoons olive oil

•Juice of 1 lemon

•1 teaspoon dried oregano

•Salt and pepper to taste

Instructions:

Marinate the Chicken:

• In a bowl, mix 1 tablespoon olive oil, lemon juice, dried oregano, salt, and pepper.

• Add the chicken breasts, coating them well.

• Let them marinate for at least 30 minutes.

Grill the Chicken:

• Preheat the grill to medium-high heat.

• Grill the chicken for about 6-7 minutes per side, or until fully cooked.

• Remove from the grill and let it rest for a few minutes before slicing.

Prepare the Salad:

• In a large salad bowl, combine the mixed greens, cherry tomatoes, red onion, and avocado.

• Add the sliced grilled chicken on top of the salad.

• Sprinkle with crumbled feta cheese.

• Drizzle the remaining olive oil over the salad.

• Season with additional salt and pepper if needed.

• Toss gently to combine all ingredients.

• Serve immediately and enjoy your refreshing summer salad!
